Papa's Day

Hey, hey!  How was your Father's Day last weekend?  Did you do something special for that Papa in your life.  I woke up EARLY and made Matty breakfast in bed.  Eggs, French toast, Fruit Salad with yogurt and honey and a cappuccino.  I think he enjoyed it before he rushed out the door to help out with sound at church.  The girls were so upset with me for not waking them up to do breakfast in bed with daddy that they insisted we have lunch in bed too!
We made green salad and fruit salad for daddy's lunch in bed!  Two meals in bed in one day...lucky daddy!
For our evening meal, we did another chopped challenge!  We really enjoy a television show on the food network called "Chopped" where chefs are given mystery items in a basket and have to prepare 3 courses with these mystery items.  I made our main course and the mystery items were: Jerusalem artichokes, rhubarb, choko, and blue fish.  C'mon!  Those were some tough ingredients!

I made citrus basil blue fish with a rhubarb citrus sauce, potato and Jerusalem artichoke soup topped with Parmesan cheese and crustinis topped with a choko, rhubarb, onion relish.  It wasn't SO bad! haha!  Actually the soup tastes incredible and the fish cooked perfectly!
Matty made dessert!  In his basket: pickled jalapenos, molasses, corn cakes, and Parmesan cheese!

Matty was ambitious and made corn cup cakes from scratch...no recipe...topped with an apple and jalapeno chutney and decorated with a Parmesan cheese crisp!  Such a talented man!

As always, it was a blast to have a chopped challenge, but a little stressful as you only have 40 minutes to create your masterpiece!


The girls and I are off to learn about chicken and eggs at Science class!
